After parting ways with Susana, Corcho devoted himself to transforming Yellow Rose into one of the most remarkable country estates in the area. Over time, he expanded its amenities by establishing a polo club and a winery.

To underscore his commitment to Uruguayan polo and signal his entry into winemaking, Corcho hosted an elaborate barbecue at Yellow Rose. Many attendees were unaware that a house wine was served during the event. The unlabeled wine received genuine praise, with seasoned experts such as Adolfo Cambiaso Sr. and Eduardo Costantini expressing admiration. Corcho Rodríguez revealed that they had been working on producing the wine for seven years, emphasizing a dedication to quality rather than quantity.

The vineyard, spanning four hectares, cultivates varieties like tannat, merlot, and pinot noir. Corcho favors pinot noir for its smoothness and robust flavor, with production inspired by the style of a Romanée Conti wine, setting a high standard. Embracing a minimal intervention approach, the vineyard practices natural cultivation without irrigation or chemicals, although it lacks official organic certification. The initial production in 2011 was limited to a thousand bottles due to strict quality standards. Despite facing challenges in subsequent years, the current goal is to produce 5,000 bottles this year.

Corcho Rodríguez’s interest in winemaking extends beyond personal enjoyment, reflecting a profound understanding of the process. While the wine is not currently available for commercial purchase, the plan is for exclusive distribution in select restaurants and establishments, positioning it as the Yellow Rose signature wine. As part of his dedication to the polo club, a book chronicling Yellow Rose’s equestrian activities, club achievements, and lifestyle will accompany the wine, reinforcing its unique identity beyond its varietals.
